OK... to remove the numbers permanently on the resistor (you can always put them back in); in your Fritzing core folder open the \fritzing.0.9.3b.64.pc\fritzing-parts\svg\core\schematic\resistor.svg file (it't about half way down), in a text editor (I use notepad++) and on lines 16 and 19 delete the numbers 2 and 1 at the end of the lines, save the file. You can do this to other .svg files as well. If you ever want to add them back in you can always do it later. Or you could just delete the whole text lines if you want. 
You don't need to restart Fz but you will need to drag a new resistor out for the numbers to not show up.:
